    No doubt. He’s also the guy who pulled off cooking a meal in a shoebox. 

    And the buns were fantastic! My go-to recipe for buns now. I added some diastatic malt powder (because I have a big bag of it, and need to play with it), and so could have gone with lower rise/proof time.  Caliqueen and I both stopped after the first bite and said the same thing... “wow! The bun is so good!!” 

    The briochey part of the recipe really kicks it up. I was mixing in melted butter previously, but kneading in soft butter at the end instead is the winning move.

  • My smallest cooker but it produces excellent results. Raclette, homemade sourdough, and salami. It runs on 3 votive candles so BTU’s are likely measured to the right of the decimal point.

    Dude... that is awesome!!

    And just reminded me that we actually have a raclette rig that we haven't used in years. Its a bit bigger, with a stone and electric element, and space underneath to broil 'taters. Now I miss it.

    @The Cen-Tex Smoker  psycho is the right word my friend. It takes a lot of patience and finesse. Challenging to get the stick through the opposite hole, even with the stainless skewer to punch pilot holes. Also tricky to get the knife tip exit at the opposite slot through semi frozen meat block.

    Stay away from the el cheapo collapsible plastic boxes made in China units.  Got mine as a gift for cooking at an eggfest, it's super good quality made in Italy... thick gauge stainless steel cage that has no flex, interchangeable top and bottom plastic are so solid that you can drill to enlarge the holes!

    @The Cen-Tex Smoker  I’m the same way about the clay wok stove. I’ve almost pulled the trigger multiple times. 
    I keep telling myself that’s why I bought the MM.

    Oh, and I showed my daughter the pics and she likes your EZ bake oven.  She has some old recipes from her childhood she could recommend.

    Looks great. Those are fun. I always end up overeating because each one is so small. Too easy to grab just one more. I might need to dig mine out. Lamb is my favorite meat for those.  

    A few pages back I posted my Arrosticini (a.k.a. spiedini) Grill.  That and the Cubo are a perfect match.

    Haha Ashish, good memory. Actually it was bus+train+bus+car to get that puppy home  =)
    After getting rid of my WSM, PBC, tandoor, Maximus wfo, Ooni, Cook-Aire and couple of eggs, I've fallen by the wayside  :)

    It is a collection like that (and I promise you, you and @cali are neck in neck in this regard) that launched the idea. I know we “need” every device we have, but, consider this the Marie Carnavordo method - If you don’t cook on it when you are in a mult-month quarantine, is it a cooker or a sculpture?

    One stipulation - only one cook required per model of cooker.  Otherwise, we’d get a week of Weber Kettle cooks from @cali (not that that would be a bad thing)

    Last, @caliking, do you still have that asado cross?

    I heard a great interview with Bernard Hopkins (former world champion boxer).  He spent many years in prison and talked about turning a shoebox into a microwave to cook while in the joint.

    That would be an interesting cook.

    You talk like you don't know me. I've been a hoarder since waaaay before it became fashionable.

    I wasn't sure if foster cookers counted, but I'll plan something to have it in play. 

    And same problem as @SciAggie re: an asado cross cook, but maybe I can figure something out. I've got time =)

    And Gary, check out Hell Chicken (Achilles Heel bar in NYC). I was planning on doing this cook at BAM! Blast, before it was postponed. If anyone has the kit to pull this off, it's you!

    If it’s a problem scaling up - why don’t a weld up a small scale cross that will hold a spatchcocked chicken or some spares...
    It would fit in the hearth...

    Sight unseen I would wager on @SciAggie.  But I could be wrong here.  All great fun and diversion as well.  
    It depends on whether you're going by number or cumulative weight.  @caliking's game is strong --- I had to cut the challenge down to "one cook per TYPE of cooker" for a reason.

    I don’t know if a spatchcocked bird will fall apart on the cross. I guess I’ll find out. 
    @The@"The Cen-Tex Smoker" I was thinking the same - chicken, ribs (pork and beef shiners), flank steak, maybe a turkey???

    I want to be sure I have clearance to put a cazuela under the protein to catch drips and juices. I can build the fire in the brassero
