    @HeavyG you nailed it. As I said, I was lazy and didn’t cut down the wood to make more appropriately sized splits for the hopper. Which is why the first few pieces of wood didn’t fall to the bottom of the hopper, and add to making a good bed of coals. I corrected course about midway, by splitting the wood into smaller splits, that "flowed" through the hopper much better, and made a much better bed of coals. The temp variance was much less once I figured that out  

    But 3 splits burning in the hopper did indeed yield higher temps than 2 splits actively burning in the hopper.

    Add to  all of that the element of ...

    " hmmm... temp has fallen to 190F. Cocktail level has also fallen to a critically low level".

    "Should I throw another lil split on? Or make another cocktail first". 

    The latter usually wins. For me, at least =)

    @caliking So your advice is to be sure I have an ample supply of adult beverages when I fire up the asado?
    I have no idea how to do this. I’m only a YouTube expert. 
    I’m depending on slow coals and time and alcohol to do the trick.

    @SmartyPantz, a few years ago, in a "once you've learned good outdoor cooking principles you can make them work on any grill" discussion @henapple mentioned that I could cook a good meal in a shoebox.  My son and I decided one day to see if that was true.  Turns out it is.  Although only one of the two shoeboxes survived.  I'd recommend more foil if you want to do it.

    Great manufacturing skill set (no surprise) right there with the variable torture adjustment height.  Chicken will hang better but your creation so your call.  The down-stream question-does it get its own spot in your incredible cooking ensemble??  Another rig for you to expand the already off the charts cooks you create.

    @lousubcap Thanks. You may have noticed it is made specifically to fit inside the hearth. But my sneak attack is that it will also nestle nicely on top of the cooker I made for the large paella pan. So when I break out that hunk of steel I can cook paella one day and then have an asado the next day. I’m contemplating a hoop structure for that so that I can hang meats or vegetables as well. 
    I hope this gets you inspired for when you get your Santa Maria grill.

    @SciAggie - I am inspired to get that and may go sooner than later although I am now later than originally planned.  Definitely from LoneStar (48-30 is the target) but as you could imagine, a few hic-cups in the acquisition plan.  But I will either clear a non covid issue I have been addressing just declare victory and get it done.  
    When the deal is done I will suggest you get a cut of the proceeds.   B)
