@SciAggie  that is gonna be an epic outcome.  Standing by as I know you will nail the finish temp.  The aromas have got to be incredible.
Way to get it done, bring it and provide some great relief for those of us here.

    Update/

    Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

    Ok - so results:
This is a great  cook for drinking and bs.
It took nearly 2:00 hours to get done. The skin was crispy and the meat was tender. Served with roasted potatoes and stir fried dandelion greens

@20stone I’ve posted at least a couple on here.  :)  I have 5.5lb rack of short ribs for tomorrow. I’ll be sure they make an appearance here.

youve clearly mistaken me for someone who's far more organized than I actually am =)

I could probably rustle up a blackberry crumble type of thing, if you could throw a recipe my way.

Haven't fired this up in several years. And pizza isn't quite my forte. But I think I can pull it off. Sort of.
