Part of what I'm cooking at Salado arrived today. Two 18 pound gold grade Waygu briskets. I only hope that the Gods hear my prayers and are kind. If they are not, we will be eating some high dollar crap.

    Dayum 2 SRF's????? apparently Salado isn't just the kilt wearing festival we were led to believe it is.....
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    With the food you turn out I wouldn't be too worried about it.  Too bad there isn't an event like Salado up here.

    You ARE a brisket god dude! I am sure they will be awesome, you taught me most of what I know about brisket cooking. I can see that some lucky people will be loving that at Salado, have fun dude. :peace:

    Awesome, looking forward to the outcome, I'm sure it's going to be fantastic.  I still haven't tackled a whole brisket, too intimidating.... maybe this summer.

    I am doing one the night before and one at the after party. Will be doing oysters from take off to touch down. Going to do the hog head at Mickeys discretion.

    I haven't made a gold label.  Have fun!

    I got one before they split their brisket inventory.  It sure tasted like gold!  :)

    @SGH  Would be cool to show peeps from Brisket Camp the texture difference on one cooked with slow love.  I've done 2 or 3 fast and absolutely hated the texture.

    Your calculations are correct my friend for this shipment. Got a bigger order arriving tomorrow. Something real special for my egghead friends.

    Caz I intend on running these no higher than 240. If time allows I will run them 220-225 for the duration.
