    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

    Have you been to the Chinese Lantern Festival at the amphitheater in Cary yet? We went Saturday night, I was pleasantly surprised by the display.

    That is funny. Fitting too. They moved down from the Philly area. Reminds me of Atlanta, most of the people you meet in the Atlanta area, are not from there.

    Discovered this morning, Malcolm's double glove trick works great at cleaning/prepping your egg.

    It was hilarious the first time I heard it, and continues to be funny and accurate.  But really, we do not venture much outside of Durham these days.  Just too much good stuff going on here.  A dramatic change from when I first moved here.

     Had to unfreeze my lid as I left it uncovered when I went to Florida. Your gonna have to steam them bad boys for the authentic presentation. I suppose grilled will be even better though. 

    As for the clean and prep, just try not to get frostbite. Lol. Happy new year!
