    Getting ready to spatchcook a fresh chicken on the large before the rain and cold (relatively) starts today.

    I'm not a fan of these white steel wheels. I don't mind the rim itself but the white has to go. I'd love to get some different wheels but with them being a zero offset 4.5 × 5 there isn't very much for alternatives. So I'm looking to Plasti Dip them and hide the white and give them an extra coat of protection from rust. 

    Do I just stay basic with some basic black or do I go with something a little more crazy? Plasti Dip peels off when done. So nothing permanent. Just a quick mock up what it could maybe look like. Let's say Agree button for Black and Like button for Green? 

    Sorry this is kind of lame. Just more less entertaining myself.

    Rain finally let up here so I put the chicken on indirect at 275 degrees. 
    Outside temp was 47 degrees and breast internal temp is now 133.  Pork U Turkey rub over Black Truffle oil. Will take another picture when the chicken is ready to pull off the egg.

    @YukonRon Thanks for the kind words. Comfort food for sure. I have pinto beans simmering as well. In about 4 hours or so it will all be ready. I plan on eating too much and having one too many beers tonight.

    Spatchcock chicken done, internal breast temp 169 degrees, thigh was at 189. 
    SWMBO plate - she wanted yellow beans and fresh coleslaw made with angel hair cabbage.

    My plate one chicken leg, coleslaw, and jasmine rice made with fresh chicken broth. Broth made with backbone, giblets, onions and carrots. Dogs next door will get the giblets.
    Good eats on a cold, rainy day. Thanks for looking.

    How much Ron?  I usually try to keep my wine purchases under $10 - $12.  Call me a heathen, but I usually can't tell the difference between cheap and expensive wines.

    I did that the day I got a new espresso machine. I was up until 2:30AM. On a Sunday night. I had to work the next day. That hurt.

    Just got back from a dinner with sales force and dealers.  We were at a top notch steak house.  I hear "what the heck's a Wagyu?"  Look down the menu and they have Japanese A5 Wagyu from 150-200. 

    Some more banter around the table and more comments that made me realize 1) how little these folks know about food. 2) how much I've learned in the last few yrs and 3) sales guys have the best expense accounts.  

    I, of course, had the big eye tuna sashimi style. 

    Meal was over $100 dollars/person with no alcohol. The dealers and sales guys were Mormon...
