    Thanks @lousubcap, flavor and moisture were excellent, only the bark was a little disapointing. I wrapped in BP and then two HD foil layers, was in the SRF cooler for  7 1/2 hours (guests were late). Warmed cooler and towels at the start.  Mistakes I made:  1. BP plus foil, should have gone foil only, and 2. Put in the oven briefly since it was so late. It would have been fine directly out of the cooler based on the slicing temp.

    @da87 -  every journey is a learning eggsperience.  The end result is what counts.  Odds are your guests have never had anything with the taste and texture of SRF.  I'm sure it was very much appreciated.
    BTW- you can insert your remote read thermo (if you have one) into the wrap and pack meteorite to watch for temps.  Or if getting nervous just use an immediate/instant read thru the foil to see where you are.  Sounds like you adapted quite well to the high speed cow.  Congrats on the entire process.

    Thanks @lousubcap, it was a learning experience and you are spot on, our guests thought it was amazing - I'm my own worst critic!  I'll order 1 or 2 SRF briskets the next sale and restock!  Thanks again to you and @YukonRon for all of the assistance!

    Let cool for uncovered for 30 minutes, wrap in paper, put in cooler, no foil....will help your bark.  Foil right after cooking steams the bark.

    Thanks @nolaegghead, I did let the brisket rest for 20 min before wrapping and I normally do as you recommend and use BP only and no foil.  This cow went really fast and since I had such a long hold (7 hours) before the guests were coming and had never dealt with that before I added the foil...  live and learn!

    Ha, this was the first year we didn't have to worry about that.  New school this fall with a dress code.  She's super excited about the new school, so we just had to say "This is the dress code." and all the complaints melt away.

    All schools here (UK) have a dress code up to Year 11 (16 year olds). Jewellery and hair colour / style / length are also regulated. If they go to a college for years 12 / 13 there's no dress code but if they stay in school it's usually suits for the boys / smart office wear for the girls.

    Anne's ribeye on early, she likes well done. Fried onions and grilled peppers to go with it plus some salad and sour dough bread. Mine's a sirloin, quick sear both sides.

    Yes, I just have to work it out. The first cool spell I want to hang a leg of lamb by a string and roast it vertically. 
    have you gone back to your first post and followed your own progress? I don't think I have ever seen anyone progress so fast from Newbie to costing people thousands in forum dollars when they see your stuff

    Seriously - it has been a fun ride.  Buying my first egg was indeed a life changing event for me. That, and a thermapen. Thanks for the kind words. This forum is also a great incubator for success. There are many talented cooks here that share their knowledge freely. This is a great community.

    @JohnInCarolina - such a school would likely be private and then you weigh the tuition etc vs the clothes.  Upon further review-you definitely would come out ahead.  Sent two sons to private HS- dress code eliminated one of the opportunities to have a contest.

    My kids had a dress code in elementary w no issues.  It was great.  Neither the middle school or high school has one. That's when they could really use it. My son couldn't possibly care less about it.  My daughter dresses fairly conservatively but still has to have every outfit planned for the whole week.

    The cost really isn't an issue for us so much as the indoctrination.

    It was so much easier.  Clothes were cheaper too, although tuition cancels that out.

    @lousubcap - even if we weren't going private, most middle and high schools in our area have dress codes, and some elementary schools do too.
