Tri tips are not easy. I tend to go hot on them, with a thermopen checking internal temp. One of the keys to try tip is cooking it to correct temp, renting it, but maybe re importantly, knowing the direction of the grain of the cut, so you always cut it across the grain. The grain direction changes on that cut half way across.

Cooking a rack of beef ribs. Been awhile since last doing the "dollar bill" dome seal test, so I did it and all good.Noticed my top band, at the front, was lower than where it used to be. The dome alignment mark is slightly visible above the upper band top edge. Unsure how long its been that way.Egg is performing as desired, expected temps at vent openings normally used. Plus I know the dome seal is tested good. Should just forget the whole thing until there is a change in the dollar test. Going to have the fight the urge to move that band back up where it once resided. @dbCooper - As you noted, don't fix what ain't broken. Your indicators are the dollar bill and vent settings. Anyone remember when Subway had their $5 foot longs? My Dad picked up four subs this afternoon. Grand total....$70. I personally stopped going when they put a tip option on their payment screen.
