Little pork shoulder I picked up marked down at Publix a couple weekends ago. Brined overnight and had some cherry wood to add the Rockwood. Haven’t smoked any large cuts in a good while but for less than $10 and the holiday coming up I grabbed it. Going to pull the skid plates off my 4R today so the ham fisted techs at Toyota don’t break off the bolts again for an oil change this weekend and besides that just chill and enjoy some beverages. Not glued to a computer terminal for 10 hours today is the best part.Jacksonville FL

Dang it. Brought the camper over to the house and plugged it into the garage. At some point I lost power in the garage. Breaker not tripped. Checked all the GFIs. Time to go buy a tester. @Canugghead The Sous Vide worked out good given the situation with us being out of town and timing. (We volunteered to cover the meal on the 4th as the host covers the meal on the 3rd) My wife had to work this morning so we had to be packed and on the road yesterday evening. We also had some prior obligations on the morning of the 4th. So I knew the majority of our cook needed to be done the day prior. The Sous Vide made the most sense for holding with the time and tools we had available.
Overall thoughts:
I'm happy given the situation. The biggest drawback with the sous vide and the brisket was the bark. I tired the foil boat method as I wanted to see if I could get the bark on the fat cap to become a little crunchy as I knew the sous vide was going to soften when taking a swim. The hold ended up being around 14 hours at 141 degrees.
What I might do differently next time:
I didn't have too many options as I was at my friends place. So I was limited on resources. If I was at home and needed to cook a brisket ahead of time I might FTC for a few hours, bring to room temp, vacuum seal, and reheat a few hours before serving the next day. I think that may help with the overall bark. I still want to try resting a brisket in my oven roaster and see how that works for a long hold. I'd say the sous vide overall was a win given the situation and limited room when traveling and cooking a brisket away from home.

I did something similar with MSM, previously smoked to 160 and chilled, steamed to 200 (usual serving temp) and foodsaver sealed for transportation in hot water. Worked well, the hold was only for few hours though.
I've been wondering if I omit the steaming, I may be able to use sous vide to accomplish both steam and hold, kind of killing two birds thingy? time/temp?

May also try oven roaster for holding pulled pork or regular brisket. Got this from CL for $8 years ago

I was pumping gas just a few minutes ago. I glanced at the car in the next bay. The occupant of the passenger seat was out of it. Like full-on lean back mouth gaping open out of it.
