    Famine to feast.  If you were parched before Christmas you must be slaked now?  But the deluge continues with seamless PL action this week before the FA Cup 3rd round staunches the flow at the weekend.  Plenty of match-ups to ponder, so here we go;

    Monday

    Brentford v Liverpool, 9th host 6th and neither would have predicted that in August.  The Bees lost their main man Toney at the end of their victory over the Hammers while the Reds beat the Foxes by virtue of two own goals. Tough to call but quality will out, 1-2

    Tuesday

    Arsenal v Newcastle, Game of the week and a huge test of the Gunners cajones.  Toon were flat against Leeds but will be bang up for this.  A home win will be the inflection point after which we all start to believe.  2-1

    Everton v Brighton, Filthy Seagulls mercifully well beaten last time and Everton mysteriously drew with Man City.  I am hoping that’s the start of Super Frank’s renaissance. But 1-1 feels about right.

    Leicester v Fulham, tight game as each could win it. The Foxes defo’ need it more and that should make the difference but Mitrovic is in ominous lack of goals form and missed a pen’ last time out. 2-2

    Man Utd v Bournemouth, 4-0 with Rashford scoring as many as he wants.

    Wednesday

    Southampton v Forest, shoot-out at the bottom, this game won’t decide their seasons but a win could bounce either out of the relegation zone, albeit Forest play later today and could be already - but I doubt it.  Could be 7-7, could be 0-0. Home advantage makes it 1-0.

    Leeds v West Ham, tough times for David Moyes as the Hammers slipped up again and are now 17th after 17 games, which is very much not what the fans feel entitled to.  Heading to Leeds is not what DM wants but the fans will be right up for a bit of 80’s nostalgia as they knock seven shades out of each other, outside the ground.  Ah, simpler times.  2-0

    Aston Villa v Wolves, these near neighbours are both in stabilisation mode amongst the league’s southerly reaches with new mangers trying to exert authority.  Screams a draw, so 1-1 it is.

    Palace v Spurs, ought to be an away win but the Eagles managed to summon goals and a win - albeit against the worst team in the league.  Blowing hot and could is a kind assessment of their form this season.  Very unlikely to be a classic. 1-1

    Thursday 

    Chelsea v Man City, a biggy because Citeh slumped to a draw with the Toffees and Chels remain off the pace and need points. Could be helter-skelter fun and frolics,e specially if the Haaland-atron has been given too much Sunny D like last time, cavorting the pitch like a giant 8 year old at a birthday party. 2-3

    And breath.

    Came home from Wegmans to find the wife had pulled everything out of the kitchen cabinets.  Looks like dry January will be starting on the 2nd.

    Spending New Year's Day, which is also our anniversary, in Carmel-by-the-Sea, where the weather is perfect. 57 degrees, sunny, and a nice ocean breeze.
    XL BGE in San Jose, CA. Also a Pit Barrel Cooker, a Cal Flame P4 gasser, and lots of toys including the first ever Flame Boss 300 in the wild. And a new Flame Boss 500.

    Working on some Pastrami.  Finished a 20hr soak to desalinate some corned beef, now starting. 30hr dunk at 145.  Interested to see how it works, this is the longest I have sous vide anything.

    My smoker brisket game is nothing to write home about either. SV has been a good antidote (crutch?). Broadly, I suggest the following:
    i) trim brisket and divide into an even number of 3-4lb pieces. Coat each 3-4lb piece in a mix of salt and pepper. 
    ii) vac seal each 3-4lb seasoned chunk. 
    iii) from either fresh or frozen, throw the vac sealed brisket chunk into the SV at about 160 for 36-40 hours. 
    iv) upon conclusion of the sous vide cook, throw the brisket into an ice water bath to cool.
    v) once cooled, open SV bag, discard juices, pat brisket dry and apply a new coating of  salt and pepper. 
    vi) smoke brisket at 300-325 for 3 hours. 
    vii) FTC, slice and serve. 

    Personally, I love advance meal prep, so having several chunks of vac sealed brisket in the freezer and at the ready for the SV pot is a godsend. As long as you have a few days’ notice for hosting, the only real “labour” is the three hour smoke.

    Thank you for the plan.  That sounds like a great way to do it.  I especially like the ability to just cook a portion of the brisket.  This will definitely make an appearance this year!

    Not now, but I did spend 10 hours here last night. Saw more vomit than I would ever care to see again and more women walking in bare feet. Overall successful NYE. Weather held off until after the fireworks and then the rain drove everyone back inside. 


    Most effective officer we ever had on duty for big events was "PC Rain"  I guess they would be known as Officer Rain for you?   
    Incredible the difference a well timed deluge makes on demonstrations and mass gathering.

    Unfortunately we don’t really get the rain often enough to count on it. It was a pleasant surprise this year, pushing everyone back inside and not letting the drunk folks have enough time to think that they want to fight everyone.

    It isn't bad if you are a careful shopper. We have been coming her for forty years, thirty as a couple, and we know reasonable places to stay. So what if we didn't have the $725 per person dinner at the Michelin star restaurant, or sleep in the best suite in town? We have made many friends of innkeepers, restauranteurs, and winery owners. We get treated fairly and sometimes get perks for being repeat customers.

    And it is the best walking town I know. We park the car when we get into town and never move it. We usually walk around ten miles a day, and wone did over seventeen. Have to work off all that food and drink! 

    It is nice to have this great destination about an hour from home.

    Never seen a pro football incident like what's happening right now.  Damar Hamlin  of the Bills took a hit, stood up, collapsed, and was soon getting CPR on the field.  Just pulled off by ambulance, and both teams have retreated to the locker rooms.  Don't know how they can be expected to continue the game.  Very awkward for the commentators, they're trying to fill in all this dead space, and what do you say?  Damn.    :|

    Very scary and unprecedented. I don’t know how they continue to play the game. I’ve never seen that many players visibly emotional.

    Take it with a grain of salt, as early reports are often wrong, but this does not sound good.

    I have an acquaintances who, in highschool, was playing soccer and he kicked a ball that struck his friend in the chest.  The doctors said it hit the kid at just the wrong time and stopped his heart.  His friend died right there.  For how rugged the human body can be, it can also be exceedingly fragile.  Hopefully, Damar Hamlin survives this.  Very scary.
