  • Wrapping up the day.  

    Had an all day cook out with one of the owners of my company.  We’re in Rescaldina Italy.  Had more wine than I care to talk about, a few cuts of beef, a few different meats, sausages, salami from his buddy who is a butcher. A home made tiramisu from a buddy’s  wife. These guys have been friends for 30+ yrs. It’s a holiday weekend.  The only other person here who didn’t speak Italian only speaks Russian, so I did a lot of close listening.  His cars are posted on the exotic thread for those who want a peak. G


    The order/orientation os terrible.  I’m too inebriated to fix.  Also some grilled cheeses in there.

    The utensil is a "Lees Corn Cutter & Creamer".  It is from my wife's grandmother.  We have tried other types and styles, but this is the one I like the best.

    My recipe is super simple:

    1. A bunch of sweet corn (white preferred), I used 8 for the batch in that 9" skillet.

    2. A lot of butter (used 4 tablespoons in this batch)

    3. Some half & half or milk & heavy cream (maybe a cup total), but add it slow to get the texture and flavor you want.

    4. Salt and fresh ground pepper.

    If you are feeling frisky you can also add shallots, but sweat them first.

    Instructions:

    Heat up cast iron pan on low
    Add butter and allow to brown a little bit
    Add in corn & corn milk
    Stir it up and heat it thoroughly
    Add in half&half slowly and keep stirring
    Add salt & pepper to taste.
    Cook down for a min of 20 min with regular stirring.

    Some people also add sugar, I do not.  I find that makes it too sweet.  I do cook it down and add cream or water depending on  the flavor.  20 min works fine, but if I have more time I keep cooking it down.  This helps break up the corn shell, but is more for texture.  My wife will cook it all day and just keep adding liquid.

    @theyolksonyou - Caught your pics of the stable but the banquet above is right up there with that car access.  Nothing like being imbedded with the locals and connected ones at that.  Continue to eat well and enjoy. 
    As you well know in Italy they drive on the same side of the road as the US so time to get behind the wheel of one (or more) of those exotics and air it out.  
    Better to be lucky than good one more time!

    Brother Ozzie is being less than honest here. That is actually an anal dethatcher. Of course it can be used for corn, but that’s not what it’s actually designed for.

    I asked.  I won’t repeat exactly what he said, but it didn’t involve me successfully taking a test drive.

    worst week of salmon fishing ive ever experienced, two salmon in 11 days. yes, you can call me fishless.  had a friend put his bass boat in the FRONT YARD.  hung my head low and fished for bass.  not even picture worthy but good to catch up on old times

    That's the only way I have ever had eggplant.  Soaked in milk first.  This roasting them is a new experiment for me.

    Had the sniffles today. Got progressively worse this afternoon. Mother Fudger! 3rd day on the new job too. At least I have a RAP and access to the network from home. Telehealth Dr called in Paxlovid.
