    How do they de-fur the pig?  On my ex-BIL farm, all we did was dispatch the pig, bleed it, then give it to the person buying it.  Otherwise, they were sold live.  Christmas pigs are the best.


    Like Scottie said scald tank around 145f then on to the scraper/ tumbler finish with hand scrape and torch ….

    It just depends. If you kill a wild boar hunting the anus can be a little loud or wangy. Similar to the wang the rest of the carcass has. 
    However if you trap a wild boar and castrate it and feed it out for a few months it is indistinguishable from domestic meat. 
    So with the above said I err on the side of domestic “taste”. However we castrate and feed out all wild boars so in our case it’s all the same. No dealing with a loud/wangy anus.

    Making chilli on the stove with beans and corn.  Even used McCormick seasoning.  Might add pasta just to round it out.

    Making chilli on the stove with beans and corn.  Even used McCormick seasoning.  Might add pasta just to round it out.


    Add some cinnamon while you’re at it.  Never go half Cincinnati.

    Yes, but the enormous relief of waking up hangover free is a good off-set.  Does taste lovely, though.

    Regular Guinness isn’t that heavy, alcohol wise, is it?  What’s it like, 4% ? That’s practically considered a non-alcoholic brew here in the states these days.

    @JohnInCarolina - you are correct.  It is much lighter than the perceived content and is at 4%.  Guess @CPFC1905 gets after it in fine fashion.   =)

    I’m thinking the truth is that Ed’s more worried about the calories than the alcohol content.  After all, that Brosnan-like physique doesn’t maintain itself!
