Man you have some good will power going 8lbs at a time. I'd be lying if I said I wasn't eyeing up a second dehydrator for bigger batches this evening. Menards has a 5 tray dehydrator on sale and a mail in rebate for $20. I wasn't sure what the quality was on it so I passed. Going to look into it as a couple dehydrators going would be nice. 

Do you use curing salt when you freeze? 

 A $20 dehydrator will work just fine, in that price range I have had two, one with a fan which I prefer and one without which still worked fine I just rotate the trays more often.

It’s actually pretty crazy. From what I priced today I can buy a brand new truck for very nearly the same price as one that’s three years old. People either trade when they are low miles or drive them (like I do) forever. 

So, I’m probably going to buy a new Tacoma tomorrow. 

It’s nuts, when I bought my Silverado 2 years ago with rebates and such I came out a few grand less than the 2-3 year used ones on the lot.  

That’s why they are still on the lot.

If you worked for an electric Cooperative in the US, you could buy a Ford or Lincoln for X-Plan pricing.  Basically invoice price.  I bought 2 Lincoln’s and several F-150’s on that program thru the years.  Knocks about 15-20% off sticker price.  Since I retired, I no longer get that benefit.  However I discovered that if I ask, most Ford dealers would take “invoice” price on a holdover late in the year, just to get it off the lot.

Thanks @JohnInCarolina , basically swapped in a fully smoked packet in place of Boston Butt, the rest of the ingredient s pretty standard trinity ( sub Poblano for bell) albeit I cooked it seperat in a pork stock with pork liver
