    Man you have some good will power going 8lbs at a time. I'd be lying if I said I wasn't eyeing up a second dehydrator for bigger batches this evening. Menards has a 5 tray dehydrator on sale and a mail in rebate for $20. I wasn't sure what the quality was on it so I passed. Going to look into it as a couple dehydrators going would be nice. 

    Do you use curing salt when you freeze? 
     A $20 dehydrator will work just fine, in that price range I have had two, one with a fan which I prefer and one without which still worked fine I just rotate the trays more often.

    Friend bought a new one yesterday, loaded...4x4...long bed...41 otd...if that helps.

  • If you worked for an electric Cooperative in the US, you could buy a Ford or Lincoln for X-Plan pricing.  Basically invoice price.  I bought 2 Lincoln’s and several F-150’s on that program thru the years.  Knocks about 15-20% off sticker price.  Since I retired, I no longer get that benefit.  However I discovered that if I ask, most Ford dealers would take “invoice” price on a holdover late in the year, just to get it off the lot.

    Well, the newsworthy post of last night just met the Buffalo as I was catching up on the comments.  Not a bad run, I guess.  
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Thanks @JohnInCarolina , basically swapped in a fully smoked packet in place of Boston Butt, the rest of the ingredient s pretty standard trinity ( sub Poblano for bell) albeit I cooked it seperat in a pork stock with pork liver

    About to put on a 1 1/2 lb chuck roast. Rubbed in Mickey’s Coffee Rub . Planning to do it indirect and slow but no smoke. Rockwood for the lump of course.
