    I had to dehydrate in two batches as my dehydrator only holds so much. I was able to dehydrate the 2nd batch this evening. 

    I ordered some curing salt. Which will probably be pointless as I don't see this size batch lasting more than a week or two in the fridge. Might come in handy for storing away for road trips, games, etc.

I do it regularly enough that it keeps it fresh, but not often enough to say I am an avid and passionate diver.  I dive when and where I can and have done so in many different environments and places: quarries, open water in many places on the east coast, Cabos, the Caribbean, Costa Rica (fresh and salt - pacific side), the Great Barrier Reef:
    and Silfra in Iceland “between the the plates”: ie. the North American and Eurasian tectonic plates which is commonly recognized to have the clearest water in the world with 100M+ visibility in 33F water. 

    Hope to get my cousin who is a sophomore in college certified, so we can do some offshore spear fishing. That is a bucket list item for me: captain a boat offshore and spearfish to bring home dinner. Probably a mahi up here off the NJ coast.  One of the many reasons I enjoy seeing your spear fishing adventures/pictures.

    @Sea2Ski Silfra is also a dream of mine. Planning on going to Iceland for my 36th birthday. 
    They have a whole "dive tour" that is offered now, There's 2 other dive sites I want to check out, would like to camp out one night, do some astrophotography and spend a day fly fishing along with checking out the other typical tourist attractions. 
    Any recommendations?

    It's interesting because it's not all that far from the Korean jerky recipe I used recently.  Much more pepper but otherwise a lot in common.  The recipe I used is here:

    But I bet the flavor is fairly different with all of that pepper.

    Looks good. In case it’s helpful, I’ll mention that the jerky I Egg holds up well in the freezer. I tend to do larger batches (8lbs or so) at a time and eat it at a very measured rate.

    Next week will be my last week of free egging for several months as 2020 kicks off.  Doing some business planning for 2020 and also snooping around the forum for some good cooks for next week!

    @wardo -  I'm guessing that by "free egging" you mean unencumbered by whatever spirits or persons or events are about to reclaim your life.  Hopefully not that much time consumption unless back to "The Big House".   =)

    @lousubcap - I'd been off work for a bit and one of only 3 jobs I had was to cook for the family.  So naturally the egg was used ALL the time haha.  Thanks for the referral!  I'll check it out.

    Shopping for a new pickup. My oldest son decided to roll my old one in the ditch... He walked away without a single stitch or broken bone. Lucky on that count. Now I have to replace my 2000 model Tacoma 4x4 that ran like dream and was paid for long ago...

    I’m in the market for a truck as well. I’m between the Chevy 1500 & Toyota Tundra. The Tundra has more power and the cab seems much bigger but is a gas hog.

    Glad your boy is ok. However, with its lack of injury from the crash you have some room to maneuver a response.

    Man you have some good will power going 8lbs at a time. I'd be lying if I said I wasn't eyeing up a second dehydrator for bigger batches this evening. Menards has a 5 tray dehydrator on sale and a mail in rebate for $20. I wasn't sure what the quality was on it so I passed. Going to look into it as a couple dehydrators going would be nice.

    So glad your son is ok.
    But, so many bad memories!  
    Was driving home in my '92 Toyota p'up ("Tacoma" wasn't a thing yet), after my final date with my 8-yr GF, to see the Police in their Last concert, and a Much Larger Truck came to a full stop, on a cross-street, looked at me (50 mph) and pulled out directly in front of me.  
    I hit their bed, they spun at least twice before going into the opposite ditch (fortunately no one hit them coming the other way).  My skid marks were 83' long, and I had seatbelt bruises.  Front end of my truck was toast (or, tight panini).  
    Not a great night.  And I had a 0630 flight the next morning.
    Replaced her with a used '08 Tacoma (in '08, 1,700 miles!) and she's still great, at less than 60K miles!

    It’s actually pretty crazy. From what I priced today I can buy a brand new truck for very nearly the same price as one that’s three years old. People either trade when they are low miles or drive them (like I do) forever. 
    So, I’m probably going to buy a new Tacoma tomorrow.

    It’s nuts, when I bought my Silverado 2 years ago with rebates and such I came out a few grand less than the 2-3 year used ones on the lot.
