    Honestly - the meat was incredible, considering it was just a £4 ($5) lump of pork.  Three big meals out of it and it just reminded me how good pork is on the Egg.
    V. disappointed with crackling - made a couple of school-boy errors;   1) not hot enough nor long enough up front & 2) I should have dried the skin more thoroughly and left it uncovered for longer pre-cook.   I recovered it slightly by giving it ten minutes blast 'direct'.  
    Tried a handful of applewood chips and there was a hint of smoke flavour on the outside.
    Next time - double the size of meat,  fully patted dry then 250C upfront for min 20 minutes plus more salt rubbed in (I only sprinkled with coarse salt this time).
    But will certainly put the Egg almost down for the long 160C cook.

    I can't get decent crackling on the egg either. Got a similar joint to do this week, I'll put a lot of salt on the skin to try and dry it out before cooking, but no luck so far with that.

    Sitting here staring at the walls. Can’t sleep for nothing. Have had insomnia real bad for the past week or so. I have tried everything. Drinking heavily, NyQuil, Tylenol PM’s, counting sheep and counting my money (unfortunately that only took a few seconds to count). Nothing seems to help. I doze off for about an hour and the whole cycle starts over. I have always had sleep issues, but most of the time I can usually get 2-4 hours of sleep which is good enough. I don’t think I have slept 8 hours total in the past week. 
    Sorry for the rant but I’m tired and miserable. Just thought I would vent a little.

    Scottie, You should see someone about your sleep.  That kind of insomnia will kill you brother.  Is it because your transitioning off of late shift hours?  Seriously, talk to your internist.  Hope you get some good sleep soon my friend.

     Brother Brent, if I don’t sleep tonight, I’m going to bite the bullet and go to the doctor. I have never been much of a sleeper, but this has got out of hand.

    Many , many very good meals there over the last 25 years. Last time I was there there was rabbit , quail, gator and rattlesnake on the menu. Steaks are legendary and so is the seafood. Not a place for PETA fans though, Lot's of taxidermy on the walls.

  •  We pulled 20 Supers yesterday, I bought a 18 frame extractor so that should help with efficiency however we are still talking 350-400 pints of honey... my new plan is to process into 5 gallon buckets then bottle as needed rather than bottling same day.

    Should be a good time. Beautiful old place built out over the water. They say it's the largest privet taxidermy collection in North America. If you are really hungry they used to offer a Jack's cut steak that was free if you finished it. Check out the Call of the Wild apps.
