@Cen-Tex_Smoker You guys cooked some great briskets and thanks. It just goes to show you that there many ways to cook great brisket. All were moist and tender.
I must admit I was not a fan of hot and fast brisket prior to the "Camp" but after this weekend I know now I can make it happen. We will see you in Salado.

No. That in the pic is a massive breaking knife. They don't come any larger. The knife I left for you is a true slicer. But I personally did the hollow grind work on it. I'll throw this in- NOLA paid for this out of his pocket (and it was significant). If you attended and have a few bucks to throw toward the cause, PM NOLA and make amends. Glad everyone survived and made it home safe. There were "n" people who were actually at the event and there will be 100"n" people who claimed they were at the event. I am truly in awe of the cooking that occurred, the pics and descriptions of the cooks make it EPIC. Kudos to @NOLA, @SGH, @Cen-Tex Smoker for all of their work on this event, and to all the others I might have missed. The rest of us stand on the shoulders of giants such as you.

I let him ride up front for the ride home. 2 nights ago Party Monster and Brother Apple was riding around the streets of NO in trailer drinking beef and smoking cigars. I'm not sure that was a cigar Party Monster was smoking. Had a strong and powerful smell to it.Location- Just "this side" of Biloxi, Ms.

@SGH this is Fleur deLirious (AKA NOLA's better half). I'm too lazy to try and remember my login and such, so I'm taking advantage of NOLA leaving the laptop open on the forum to add my $.02. What an amazing event this was! And on my birthday, no less. I never dreamed it would come together so well. Despite your humble postings, SGH, YOU pumped out such an amazing volume of food that I'm still in awe. As others have attested, the cream cheese/jalapeno tenderloin was incredible. The stuffed chickens were visually a work of art, and equally impressive on the palate.
@Cen-Tex, your Wagyu briskets were amazing as well. EVERYONE contributed to the great food and good time had by all. From the smallest to the greatest contributors, all helped to make this event a success. And I'd like to give a special shout-out to all the members of the BGE Wives Club -- we all put up with a lot of S$!T standing behind our men (or maybe we clean it up...) but the tasty treats they toss off those grills ease the pain (along with the fresh-squeezed-lime-and-orange-juice-margaritas!).
@SGH, thanks also to you and Party Monster for helping us clean up the site and move the big stuff with your awesome trailer.I know you were already tired out from your long day standing watch over the smoker. As if that wasn't enough, you and Party Monster then shucked and grilled oysters at our place this afternoon. You are beyond generous and such a great person!!! We look forward to hooking up with you and all the other wonderful Eggheads again in the near future. I am totally in support of this becoming an annual event, although I will advise that this is the peak of hurricane season...
