We were doing a sort of wordless cook thread. Letting the pics speak for themselves. Now that it's done, figured we had some 'splainin to do.
Top left, going down- homemade tortillas, starting from whole yellow and blue corn. Made by a white guy, a Mexican guy, and an Indian guy. Those are world love tortillas right there.
The cabeza and lengua in the pans. The lengua was the surprise winner.
Top right going, down- superlative mezcal brought by 20stone's FIL. Homemade pickled onions ( @coffeeguydenton 's recipe from a while back). And other stuff.
This sht f*cking turned out, even if I do say so myself. Reduced the bag juice from the SV lengua to drizzle over the tacos and it was a flavor bomb. Tortillas were on point. Everything came together beautifully.
The cow noggins were procured from a joint that had goats penned up in front. And a whole steer hung upside down , twitchy and bleeding into a drum as I walked in. @20stone kindly labored to build the pit and get the noggins in it.
Plates came together nicely and we're already talking about the next bigger, better, more awesomer Team NFA cook
And yeah, this all started with our respective wives leaving for a bit. For their own sanity's sake.

I like my smut corny, but we did not have any smutty corn on hand. The market (pics above) where we sourced some our peppers etc. from would surely have some tucked away, but we were not looking for it specifically.
@20stone kept saying there was this awesome Mexican market near his place, and it didn't click that he was talking about Canino's until we drove there to get the peppers. Its an awesome open market with stalls selling all kinds of things. This was my first time making tortillas, so it took a few misses before we got the moisture right and figured out how to keep them from sticking to the bag we used in the press.
I'm very happy with how they turned out, which is good because I have a ton more dough in my fridge.
* The recipe I followed had me cook the corn, steep, rinse and the grind in a Cuisinart to a hummus consistency. We then added masa hariena to get the moisture just righ, so there was some processed corn involved.(now only 16 stone)
