Looks gorgeous, but no stiff peaks with that bowl.Botch said:Reading about KitchenAid's new $700 stand mixer:

It sold out immediately, but professional chefs are panning it hard. It's their less-powerful "tilting-head" design, and a wooden bowl can't be chilled effectively, needs to be oiled after every use, which will kinda screw up your egg whites.
It looks nice, though.Visalia, Ca @lkapigian -

I ended up with 38 lbs of finished product. It’s all vacuum sealed and in the freezer for now. This was the prep cook for an event on Oct. 5. I’ll do one for show and reheat this.I’ll make a thread after the event an upload the pics.~ John - Formerly known as ColtsFan - https://www.instagram.com/hoosier_egger

Country style ribs. I've only ever seen them from the pork shoulder. These are beef and came from Aldi. Anyone familiar with the beef version and what cut they come from?

@dbCooper - no clue on beef country ribs but I am confident they will beat their pork cousins. Way to give them a run.Louisville; Rolling smoke in the neighbourhood. @ColbyLang Remember when I posted about how nasty that Boars Head plant had to be when closing it made more financial sense that cleaning it up?

Yep. I do remember. Shouldn’t some of this fault lie with the USDA and its inspector that worked that plant daily as required by law? My buddies that make sausage and boudin here in Louisiana have an inspector on site any time they’re in production.DoubleEgger said:@ColbyLang Remember when I posted about how nasty that Boars Head plant had to be when closing it made more financial sense that cleaning it up?

Absolutely. They should have the authority to shut a nasty plant down versus issuing pointless $1000 violations.ColbyLang said:

Based on all I know (which is limited) you may wish those crews would have stayed local.ColtsFan said:I’m on a statewide board for the Indiana Electrical Cooperatives and we’re dispatching 20) 2-man crews to Marietta GA. But multiple infractions for years don’t warrant a shutdown until someone dies? Seems like a failure in the USDA’s protocols. The FDA (who we deal with) will threaten to shut you down for improper labeling let alone those types of violations.DoubleEgger said:

Too big to fail. It is b.s. If those violations were happening in a family owned operation (and they wouldn’t) they would have shut them down and thrown the book at them. Tell me I am wrong @ColbyLangSouth of Columbus, Ohio.

I complained about the weather in Texas after 12 years or so, my body and my mind just really got tired of the heat.I stayed and did that for another five.
Then I moved.

Hitting our stride now. The teams in the current top six may change little from here depending upon how the increased volume of European ties inject injuries and fatigue to their ranks. Elsewhere all teams have a point on the board, so that’s nice. Citeh and the Gunners got all grumpy with each other and Palace kept a clean sheet last week. Other things happened too.
Saturday.
Newcastle v Man City, Toon just don’t convince or sustain and as spirited as this will be, Citeh’s “old” new money will show the difference in class.1-3
Arsenal v Leicester, Little Mickey A will yearn for regression to the mean here and a cosy 2-0 with little fuss or few highlights will be optimal.
Brentford v West Ham, The Bees have faltered slightly while the Hammers have not shone as their pre- and early season condition suggested. A bell-weather match for both. 1-1, because I don’t know which way it’ll go, but a decent win for either will provide the impetus they need.
Chelsea v Brighton, whisper it, but the chaotic maelstrom of recent Chelsea could be a chapter now closed. Results are going their way, this ship is steady and cantering at 2 pts per game puts them as Euro contenders come May. The filthy fetid Seagulls remain unbeaten but have drawn the last three, let’s hope this is their first (of many) defeats. 2-0.
Everton v Palace, the mighty Eagles have a history of struggling for results at the Toffees - irrespective of form or prevailing state of chaos in that part of Liverpool. Frankly a draw will be disappointing but at the same time sufficient. The hand brake needs to come off sooner than April, like it did last season. 1-0 (see football fan logic from previous editions)
Forest v Fulham, the Cottagers may have the whiff of a parts-bin special with most of their starting XI cast offs from elsewhere, but it’s working. Forest revealed a self-destruct streak last week at Brighton, and Fulham will be on the hunt. 0-2
Wolves v Liverpool, never really a great time to host the Reds and the Old Gold are already struggling. Sprinted but future early resistance, 0-3
Sunday.
Ipswich v Villa, Tractor Boys showing spirit but it’s a big jump up to the PL. Villa are 4 wins from five. Away win, and if it’s fewer than two goal then that is success. 0-2
Man Utd v Spurs, 11th host 10th and both clubs continue to feed the bafflement. Impossible to tell where each of these will finish the season. Spurs have scored more goals so far, but otherwise identical form. 1-1
Monday
Bournemouth v Southampton, the Cherries’ last two outings ending in defeat means this South Coast derby is of great importance. The Saints are struggling, that much is clear. Both will scent an opportunity. Tetchy 1-1
If, and I doubt it will, that proves insufficient - don’t forget the final two cricket ODI’s alongside the conclusion of the County championship plus the second round of the rugby premiership this weekend. What more could you possibly want?
Other girls may try to take me away
But you know, it's by your side I will stay -
