@lkapigian those cuts are rich beyond belief. I don't know how many you are cooking for but 4-5 ounces/person will do the job.The cook is quite easy. Just get a CI skillet quite hot and flip frequently.I have found the guidance in the below link to be solid:Upon further review, this is likely not your first rodeo with this cut.A true banquet awaits.

Thanks @lousubcap , I think around 10 or so people, as much cooking as I do, it’s a rare day I cook a regular dinner let alone a steak lol…I’ll have a fire pit going so I’ll toss a cast iron skillet in therelousubcap said:@lkapigian those cuts are rich beyond belief.
