@lkapigian- When you roll out those big cooks, I am always appreciative of those who can crank out great food in large quantities. Damn fine cook there. The skin looks perfect. You could use a quick read thermometer and pull at IT 150. I always get Gressingham duck breasts so know they take 20 mins.CPFC1905 said:My homage to @Stormbringer



Duck breast always a pleasure.
I ran it too long, but the Egg's indirect cook rescued me by keeping the meat succulent.

Paya is a thin stew, thickened by the collagen from the bone and cartilage of the trotters (usually goat). You could throw some meat in there, too. Actually this afternoon and on the drum smoker for the local small staffed firehouse. Chix quarters- cherry smoke wood for that rich mahogany colour (nod). No $$ shot.

They passed the smell and visual test with top marks!
