Nothing fancy. Rub is a mix of Spicy Dizzy Dust and Honey Hog. Sauce is G. Hughes sugar free sweet & spicy. Trying to lose some lbs. -

I have been in the recipe rabbit hole. Mom has been ordered on a low potassium/renal diet. Everything she likes to eat is on the verboten list. Trying to persuade her to try okra(more than just boiled) and eggplant. They grow like weeds in our garden but she never really cared for them. No tomatoes, no beans other than green beans and English peas, no cheese except small amounts of cream cheese, no to almost all greens except kale which she of course doesn’t like, no whole grains, no whole wheat bread etc. Oh no potatoes of any kind.

That's tough. My dr has me on the other side. Kale chourico potato soup world for me. I need potassium. Wedding anniversary celebration, last night.
Not the highlight of the day, because that would be my astonishment that I have completed another circuit of the sun married. Don't get me wrong, I import no jeopardy to the relationship - a stark contrast to the liberal absent mindedness about the wedding vows that is the hallmark for my former profession.
My summation of how this union has prevailed is that she is now through the mild curiosity stage, that itself replaced the quickly evaporated hope & excitement, and is now approaching it like a pained marathon runner who won't be defeated. I admire her for that but I will have to confess that no medal exists.

Generous SPG coating then direct for about 30 mins. I started at a dome temp up towards 500F, more or less shut all the vents and let it ride.
Pulled when the centre read about 130F.
On reflection could have gone a tad further, but there was good fat render. Is the charred fat anyone else's guilty pleasure?
Gave it 30 minutes of uncovered rest. The kitchen was up about mid-80's F, we're having a heatwave - wonder if that has an effect? If only there was a professor of material science on the forum who could advise me?

Pie base, layer thinly sliced onions, spread a third of a cup moz and third of a cup parm, layer of tomatoes, spread a quarter cup basil pesto, layer of tomatoes, mix half a cup mayo and cheddar spread over tomatoes, 400 degrees 25 min, let it stand for 20 min, tear some fresh basil and sprinkle with parm.mehsrea said:
