I find myself with another bachelor’s night as the wife and daughters headed to the beach for a few days of relaxation. My son is at summer camp for the week so I’m enjoying my unusually rare (but second time in a few weeks) night alone. Listening to some Tyler Childers with a guacamole topped blackened swordfish, wedge salad and some leftover cauliflower rice. Opened a bottle of 69 Miles- a great reasonably priced grab if you ever see it. The winemaker, Rob Lloyd, made his name at Rombauer and continues his excellent track record with this one.

Wednesday is a rough work day for SWMBO so we have to do something simple and comforting. Tonight was sausage, country ham, mascarpone grits, and scrambled eggs.

Smoked a smaller Chuck on the small with hickory and pecan at 250 dome. Used Oakridge BBQ Black Ops Brisket rub. It took around 4 hours to hit 160. It’s currently taking a beer bath on a bed of peppers and onions. Should have some good sammies later.___________________________________

Yup! I put some fresh slices of mozzarella across the plate. Covered with marinara and then the meatballs, some more sauce and topped with shaved parm and basil.JohnInCarolina said:

@lousubcap it was breakfast Sunday at church, so this was her contribution this month. Lots of fun making biscuits from scratch with her mom and cooking down the apples. Everything was the.
