Back in the early 70’s I use to be fascinated watching them change out ties on the rails that run right in front of my fathers house. Here's the one I have used many times...
COUNTRY STYLE CHICKEN KIEV
Source: Best of the Best from Tennessee – 1987
As adapted to the BGE by Ron Pratt
Ingredients:
¼ cup Progresso brand Italian style bread crumbs
2 Tbs freshly grated Parmesan cheese
1 tsp dry sweet basil
1 tsp dry oregano
½ tsp garlic salt
¼ tsp kosher salt
1 stick butter – melted
2 boneless chicken breasts
FOR LATER:
* ¼ cup white wine
* ¼ cup chopped green onions
* ¼ cup parsley flakes
Combine bread crumbs, Parmeasan cheese, basil, oregano, garlic salt and kosher salt.
Dip chicken in the melted butter then roll in the bread crumb mixture. Set remaining butter aside, Place chicken in a shallow casserole dish.
* For later: to the remaining butter add the wine, green onions and parsley and set aside, though you will need to re-warm it later
Cook indirect at 375° dome temp using inverted plate setter with legs pointing up. After 50 to 60 minutes pour the butter mixture over the chicken and bake for another 3 to 4 minutes

Some friends of Chris are in town. Family race team, on the road 9 months of the year. They wanted a crawfish boil, I gave them a crawfish boil.They know that racer Larson from racing with the guy in their class or whatever you call it. Larson was winning the race we had on TV last I saw.
