Just got a whole short loin for $4.99/lb. The kicker, I asked for a whole short loin at the counter, the guy comes back with a prime grade, last one they got, and I get it for the advertised choice price. Better to be lucky than good I think is the proper statement.

Question: how would you breakdown a whole short loin?My thought is to split the loin and the tenderloin off separately and then break them into steaks. Roast the bones and make stock for a beef soup for this week.
or, cut in to steaks as is. -
Only because you said it was prime, I would debone and strip steak them out.If it was not prime, I would take off the tenderloin and then saw into bone-in strip roasts, cut off the bone and retie - but you need a bone saw for that unless you are doing one large roast. The reason I would go the second way, is that if you want or need to, you can pull out a roast, thaw and strip it out at that point. It is a lot harder to put it together afterwards.--------------------------------------------------

Prepping water for my clear ice. I like to sous vide it for 4 hrs at 128.5 before chilling, then finally freezing in a directional ice mold. I find this gives me the most nuetral flavor and clearest ice.

You can see how slow I work. Last night was literally cutting the dovetails for the top front rail. I hadn’t worked on it in 4 days and had to refresh my memory on dimensions and layout.Botch said:
