Grateful for the skill sets I've learned here....just went to the grocery store which is basically empty of everything .....skillsets learned
I don't need yeast from the store, I have my sourdough starter in the fridge
Pasta shelves empty, no problem make my own
Only odd cuts of meats left, no worries I can make sausage out of anything
Low on veggies, no problem I'll take what they have and lacto ferment them
Lunch meat selection empty, no problem I have 20 pounds of salami curing right now
Eggheads are a strong community

I haven’t seen this particular egging buddy in a couple of months. Glad he made it through the season. He’ll be a monster next year.

Walked into my local butcher shop this morning, like I do most Saturday mornings. 3 people inside. Grabbed a butt, some sausages and chicken leg quarters.
Meanwhile, literally across the street the Fresh Thyme and Kroger were a madhouse with empty protein coolers.

@ColtsFan, I agree. For those of use along the coast remember our fish markets, farmers market, gardens etc. My sister raises chickens for eggs. I know a woman who raises goats and lamb. I just told mom that we might have to reconsider cutting back on the garden this year.

The dirty underbelly (literally) of owning and using an offset. If I care about my guests enough to cook good food, why would I do it on a cooker with rancid fat and rust inside? Also I’ve learned it’s actually easier to keep it from rusting or growing mold if I wash it after a long cook. Hit it with some cheap spray oil and it’s good for a while.I told a friend it’s like dating a high maintenance girlfriend. The eggs and the wood oven are much easier to maintain.

One big plus on the post-cook stick burner clean is that the next time you fire it up all you need to do is "fire the fire." That is a lure to the post-cook clean cycle. I will never learn.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.
