    Had a Popeyes Spicy Sandwich today. Not good at all. The first one I had was amazing but the last two haven’t been good. The law of diminishing returns has definitely kicked in at Popeyes.  
    We were in line to do the baking for the 80 somewhat stores located in Louisiana. On the re launch. By the time it was all said and done, their projections were just waaaay out of line. They (the buyers) expected each location to serve 600 a day. Hahahaha.

    Pulled up to the house, had to do a fire inspection at the shop this morning.  And lo and behold...

    Future Curing/Ferment chambers in place ( 2) 4.4 cuft mini fridges ...temp humidity controls , heater ( went with a low wattage pad heater) humidifier and dehumidifier on order...thinking I won't need to humidify the curing chamber from all the moisture in the protien ..

    You are correct re not needing a humidifier (at least in my experience). Depending on how much meat, you might end up (as I did) with two humidifiers.

    Thanks for in input @20stone ...are you running a heater for the ferment stage? ,I’m getting one but thinking holding 75 can be done with just the fridge off, or is your ferment stage warmer ?

    I wish I could click and zoom in the photos.  I thought we used to be able to do it.
    I brought that up with the buffalo last week. I might need some more pull from other forum members to make a change. The zoom was helpful with certain posts.
