A cord-cutter Tip. I've been watching some cord-cutter videos on EweTube, and found this website: ustvgo.tvIt appears to have (if you click on the TV Guide tab) every major network, every cable network I've heard of, all NBA/NHL/NFL/etc channels, HBO/Cinemax/etc. It's free, and available on any device with a browser (computer, Roku, FireTV, phone, tablet, etc).In playing around with it this afternoon I could find 4 issues with it:
- Pic quality is, maybe, 480p?
- It's always set to EST
- The major networks appear to be the Cincinnati stations (ie I can't get my local CBS station on it)
- Every time you go to a new channel, you have to Unmute it.

2 strip steaks from Publix that look more Prime than Costco "Prime", 1 whole chicken (experimenting with APL-style rubbing the skin with beef bouillon [out of chicken bouillon]) and Alabama smoked sausage on the egg. Boulevardier in the glass.

Cooked the dry aged sirloin experiment.
A reverse sear with a finish temp of 115 F.
Was juicy yet seemed dry. If you poke at it it was tender, when you chew it it was tough. Not a whole lot of flavor either than the grill char and some smoke from the indirect.
Several of these issues are surely because of the extremely low fat content.
But now I know my fridge is a safe place to park some meat for a long rest. I'll get a ribeye or a ny strip loin with a good fat covering and try again.
I am going to get a small fresh chuck roast and grind it with the rest of this aged sirloin that I didnt cook yet and make smash burgers.
Also, I have been doing a lot of sous vide then sear on steaks. I did just as good with the reverse sear tonight.2 LBGE, Blackstone 36, Jumbo Joe

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

@SciAggie - Just be mindful of an escape velocity brown water fueled journey. The rocket fuel of choice will have a large influence on the touchdown and walk-away experience. But from what I have read you are using top-shelf juice so you are cleared for a most enjoyable outworldly adventure.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. At my age I am working just to sustain life, never mind find new and exciting adventures. However, given Feb one would think it would have more action. But posting action requires initiative followed by action and this weekend my enthusiasm meter is on the low peg. I will endeavor to do better.

The dog and I are sitting and watching home makeover shows while the jerky is dehydrating in the other room. The onions that were in the marinade are emitting a powerful smell. Tomorrow I am driving up to my family’s for lunch . My niece showed up and we probably won’t see her again before Christmas.

Just home from taking the little ones to a Mardi Gras parade here in Lafayette...he’s 5, she’s 3. They wound up with more crap that they think is gold. Good times for all, they even got to skip baths tonight
