    Looking for ideas for a Memphis trip next week?

    I'm already a fan of Central BBQ and will make more than one trip there.
    I'll also hit Rendevous.
    Is Gus' Fried Chicken amazing?

    Any other ideas are greatly appreciated.  I'll have more than a couple days there.

    I got tickets last saturday to see our local college team, the SIU salukis, for 15 bucks a seat. Going again this weekend, better seats, 18 bucks a ticket.

    Trying to figure out what venue. The one 6 hours away but at Alpine Valley or the one here 30 minutes away in Minneapolis but inside....

    I didn't temp these. The Inside is still pretty moist, is that normal? Or is store bought just really dry? The recipe was 72% hydration, and it proofed overnight in the fridge.

    Looks fine to me.   That's a little dryer than no-knead dough.  So you kneaded it?

    It was just a stretch and fold, from the ken forkish book. It looks dry in the pic, but it seems pretty wet, almost chewy? I think that's the best way to describe it.

    I can usually judge how good a loaf is by looking at the crumb and yours looks great.

    @milesvdustin we do bread at 445F in a fan oven with a tray of water (preheat oven, add tray with boiling water, add bread) to create steam. 25 minutes for sourdough, sometimes a few minutes longer. We always turn half way, sometimes spin it 90 degrees on the tray as well - domestic ovens aren't that even in temp.

    This recipe had me cooking at 475 in a dutch oven, preheated. 30 minutes lid on, 20 minutes lid off. 

    Second loaf was cut this morning, tighter crumb somewhat but still very moist. Whatever, I made a sandwich with it. 

    Is there a better way to store this bread than plastic bags? I know it wont keep too long since no preservatives, but the bag makes it all soggy
