I've never been a huge chicken and waffles fan but this was good. There's a lot of ingredients (that I keep around) but it was actually a pretty simple cook.
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Deboned Lamb breast turned into Lamb Pancetta, both rolled and flat (back when I first got into charcuterie)
Some kind of herbs de provence/garlic/onion seasoning blended with cure applied to the slabs, vacuum sealed and left to cure for 14 days.
Rinsed off, tied up, stuffed into DryBags and left in the fridge to age for 21 days.
I vaguely remember serving it on some pizza and that it was tasty.

Be careful when following the masses. Sometimes the M is silent.
I don't care how small the SD card, I am quite confident I have never taken enough pics to fill one. Of course, suitable subjects might have altered my approach.
