@JohnInCarolina That wasn't my best plating job ever but the flavors were on point. If you make the guac spicy then you get the hot/sweet thing going on and it works...

Making my way through a stockpile of SD cards and stumbled upon some pics from cooks I never got around to posting from years ago.
Deboned Lamb breast turned into Lamb Pancetta, both rolled and flat (back when I first got into charcuterie)
Some kind of herbs de provence/garlic/onion seasoning blended with cure applied to the slabs, vacuum sealed and left to cure for 14 days.
Rinsed off, tied up, stuffed into DryBags and left in the fridge to age for 21 days.
I vaguely remember serving it on some pizza and that it was tasty.It's "Smokin Gal", not "Smoking Al".
