I just found out Hominy Grill closed in Charleston several months back. I’m truly disappointed.

Had a couple of steaks left out of a Tenderloin, I purchased while on vacation. Tonight with the wife eating out with a burfday hen, I cut them up into tip size pieces.

Cut up some veggies and sizzled them in a cast iron skillet.....this necessitated by the rain storm that came thru and drove up the humidity.
Seasoned with some espresso rub....
Chowed down.

My youngest son is making my oldest son a snack. Toasted buttered Kings Hawaiian. Just to prove he can and his brother is lazy.

I've been trying to get better about using up leftovers. I wanted breakfast for dinner tonight, so I finished off some leftover smoked apricot zeppole and 21-day dry aged beef tenderloin. The zeppole were diced and soaked in french toast batter before getting pressed into a Belgian waffle maker and the steak was used to make a cheesesteak omelette.






I think I might like this even more than the bread pudding waffles. The omelette was insane.

My biscuits tanked for a long time - then one day they started being good. Same recipe - I think you just finally learn how to handle the dough. The dough needs to be really wet and don’t overmix. I can’t make my moms biscuits, but I’m damn close. The wetter the dough seems to be better. Also, wetting your hands frequently helps in handling.SciAggie said:

I can never get my dough to look like local biscuit joints around here that roll them out. I quit that game a long time ago. My grandmother never used a rolling pin. She made each biscuit by hand. She was a seamstress so her she knew how how to delicately work the dough with her fingers. No one could duplicate hers even when youSciAggie said:

were making biscuits right along side her doing the same thing. It was all in the fingers. -
