SRF Overnighter

Got the XL loaded up with Rockwood and oak chunks. Got the stoker up and running. Got the SRF thawed and ready. That SRF is a fine looking piece of meat by the way. Rub is on and soaking in nicely. I'm excited to see how this journey turns out.

You can feel the difference handling it. The fat cap is like butta already. Nothing hard on it whatsoever. The meat is so much more tender and pliable than the CAB's at RD. If it tastes as good as it feels now, I'm in for a treat.

make sure to start checking for tenderness around 180. The last 2 I have done were totally tender at 185. almost 20 degrees from when you would expect of a choice or even a prime brisket. Can't wait to see how this shapes up for you. They cook faster than you think so keep an eye on it!

Both grades are par excellent. You are in for a real treat. You won't screw it up unless you really try to. The Waygu is very forgiving even when over cooked by quite a bit.DoubleEgger said:No sir. There are a few spots that could use a bit more rub. Just take your shaker out and hit it nicely on the bare spots.They/Them

Didn't know you were in Marietta. That's a hop, skip and stumble away. Seeing this beauty and all the other SRFs in Egghead Nation makes me want to take the plunge. Maybe one day I will. Can't wait to see how this one looks in the end.
