In the true spirit of this forum, digging the rabbithole deeper. I like it!Langner91 said:Hungry Joe said:
I was curious about not being able to sharpen my cleaver and after looking around I believe you may be able to remove the black plastic knife guide and do cleavers or other knives with a deeper spine.nolaegghead said:Couple additions/clarifications: duty cycle is 30 min an hour. I read that as 30 on, 30 off. It's small, doesn't take up much counter space and really heavy for it's size (around 14 pounds) with sticky legs - doesn't move around. Very quiet. It will not sharpen knives with an edge to spine distance greater than around 2.75 inches. So it won't sharpen the funky Ken Onion Shun or any of my cleavers. But it will do nakiri fine. I wouldn't want to use it to sharpen a heavy cleaver anyway. Japanese or Chinese are thin and tapered, good there, but edge to spine is just a tad too long.
I haven't tried it yet, I can't see why it won't work. Maybe this weekend.
Edit, I believe they call it the clamp.
Tormec has you covered. I believe if you dig into their website you will find a much more expensive model that will easily do your other blades. The T1 was meant to sharpen kitchen / chef's style knives.
From what I have heard. Trying hard to not visit their website....

I am screwed. I am going to turn on the parental controls for my router this weekend. I won't block any porn sites, but I am blocking a few others as well as some keywords.

You don’t. It’s a machined metal “stone” with diamonds.Ozzie_Isaac said:How do you true the stone on the T-1?______________________________________________I love lamp.. -

The vast majority of home cooks will likely never need to worry about replacing one.

Where did you all buy your Tormeks? I see the factory website charges for shipping unless I buy 2.
Thanks!

Heh, have you guys seen this? Martha Stewart using a Tormek (woodworking model I think) to sharpen.
She's not hawking tormeks nor EDC BGE knives, but booster shots. It's still quite amusing

That looks like a Tormek with a wet wheel (which, incidentally doesn’t throw sparks).Botch said:Heh, have you guys seen this? Martha Stewart using a Tormek (woodworking model I think) to sharpen.

It’s a wet wheel. Inconceivable one would run it dry because it is not a dry wheel. It is a wet wheel.______________________________________________I love lamp..

What one does with a wheel, wet or dry, is beyond the control of all parties involved in getting the device into an end users hands.nolaegghead said:It’s a wet wheel. Inconceivable one would run it dry because it is not a dry wheel. It is a wet wheel.
A screwdriver is also not a pry bar, but I have personally witnessed a screwdriver being used as a pry bar. It was absolute pandemonium.I would rather light a candle than curse your darkness.

I found a new video from Tormek on the T-1 today.
It addresses how to sharpen a knife with a heel and also cleavers.
I found it interesting enough to recommend watching it if you already own or are on the fence about buying a T-1.

Not the rabbit hole I will go down. Although the recnt EDC knife original and since sunk thread did nail me quite hard. Perhaps the latest EDC with BGE life-line will not be as harsh on readers. And as a tease-here is the opener-Thank me later-

Go for it, pal! Life is no dress rehearsal! At my age (soon to hit 79) the collective value of my knife collection doesn’t even come close to any $357, BUT if it did and I was younger I would have pounced on that years ago when first touted here!Dobie said:Everyone happy with this before I drop $357?Re-gasketing the USA one yard at a time -

The collective here have all been very positive on this sharpener. I keep coming back to this page and hoping something will change. I a have started putting BBQ related devices in my office now. I am plum outta space.Dobie said:Everyone happy with this before I drop $357?I would rather light a candle than curse your darkness.

I can’t really find anything negative about this other than the price point. I could use a good sharpener more than a couple new knives. I have an old Lansky manual sharpener that’s not great for larger knives and I’ve held off getting a KO Worksharp for years but this may be the one to get and be done with it.Jacksonville FL

Good point. This sharpener is about the cost of a good Japanese knife and it makes and will keep (with a little work) all your knives "scary" sharp. Whereas you may pass up on most of your knives and go to the new "sharp" one, with this sharpener you can keep everything razor sharp and you're less likely to be in the market for anything new (once you have all styles you need).
