Beautiful wife is at the beach. Hope to chase her down tomorrow. Had a hard time deciding what to cook, so this was what happened.I drink cheap beer so I can afford good bourbon.

Have made the decision to shed my COVID gut, and in absence of the ability to exercise (combination of household work schedules and parental responsibilities), I am simply going to cut calories quite aggressively, both in food and drink.Tonight’s effort was therefore both healthful and restricted in portion size.Pork chops, brined in leftover pickle juice, with roasted baby corn, green beans and red pepper, along with a side of sweet potatoes. Was under a time crunch and also single-handedly watching the kids during cooking, so was pretty happy with myself for cobbling it together quite so quickly. Was going to use the gasser, but looked like rain in the forecast so used stove and oven. Never rained!

first successful cook on minimax (last week I had NO idea what I was doing) . Ray Lampe's chicken wings with pink sauce - but we used thighs because we don't like wings !Just two of us. Got the 350 F controlled fairly well and meat cooked beautifully - Thermapen to check it was cooked through. Served with rice and salad 2 thighs each made a really good meal. Thrilled with the outcome. Maybe a couple more grills and I will try a slow cook .

Stacked Birria Enchiladas with Oaxacan cheese and spring onion, homemade guacamole, and Mexican rice using "Cowboy Ken Rollins" recipe. He sautees the rice first, never seen that in mexican rice before; I tried that using bacon grease instead of vegetable oil, taste was great but kinda greasy, I'll leave that step out next time.
