After a longer than expected hiatus due to surgery this summer and a new table build, my egg is operational again.I did some pork belly burnt ends. They turned out delicious but I’d probably choose a different sauce next time.XL BGE

@Thatgrimguy - that looks like A5 marbling in that steak-regardless, that beef is great eats (in small amounts).Beauty on that crab cake-home made or sourced?Talk about a banquet and a Thursday as well. Zucchini fries, turned out amazing. Cast iron ribeye with them but had too big of eyes to take a plated picture so here’s the aftermath.

Making Ginger Molasses Cookies the old fashioned way. Dough in the refer for an hour rest while I clean up the kitchen.
Grandson and I are taking them to our my Great Niece's place over near Tampa for the after Thanksgiving day gathering/gorging with another part of our extended family. Nice cool day here so 350 degree F should not heat up the kitchen too much.Ubi panis, ibi patria.

12" personal pan paella. (Personal in that I loaded up Jalas and artichoke hearts, no SWMBO favorites). She was visiting a friend. (Window of opportunity and left overs...) -Fire was dying and I didn't want to further mess with it. No $$ shot as the socarrat was very thin. But around the edge it came thru. Shrimp and some pre-cooked lobster meat made for a great feeder. (Cooked on the SM grill-another negative for the forum.)Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Dug out a picnic shoulder from the freezer, googled and found a random 'slow roasted Italian pulled pork' recipe that looked decent. It calls for cooking in dutch oven, slow cooker or kitchen box.
Marinated overnight, didn't feel like firing up the XL or switching on the Traeger, so I went with the kitchen box, 300F, three hours fully wrapped in HDAF and three hours exposed. Left the skin on with the intention of keeping the thing moist, not for crispy crackling.
It was dinner time six hours later, IT 180, no way it was going to pull. So I just chopped it up. Wow, except for the lack of crackling it was arguably the best porchetta I've tasted, juicy and tons of authentic Italian flavours, everyone loved it. The rind, though not crispy, was not chewy either.
I tried broiling it for a few minutes and the few diamonds at the tip starting blistering. Next time I'll allow more time and crank up the oven to 550, hopefully more diamonds will blister evenly.canuckland -
