    Not just yet but going to break in the new BS with some street tacos later.    Went through a 5 cycle seasoning process after assembling earlier today.

    @SamIAm2 - great gesture. That brisket cooked in a bit over four hours???  Something doesn't sound right.

    I thought about it but figured everyone here knows so I gave it a pass. I will get back to it on the next beef rib cook. =)

    @lousubcap , @ColbyLang - The flatter part was fine, but that large end was not done enough. Also, wasn't sure how much of the fat on that end to remove. Put that end in the large wall clock after slicing Into that part and seeing too much red. Gave the good part to the purchaser just now. Not one of my better efforts and it has been a long time between briskets. Costco Choice, wasn't the best. Neighbor saw it and for the price he grabbed it. Learning all the time.
