Tried a new IP recipe for Spanish beef, red pepper, and paprika stew. Top is the cut up chuckie with sautéed aromatics. Middle is the aromatics being sautéed; shallot, garlic cloves, tomato, roasted red pepper, pancetta, paprika, and fresh rosemary. Bottom is the finished stew over grits.

Just another tri tip. Smoked with oak and a bit of mesquite. Went on part frozen. Smoked at 200 to 220F for a couple hours then char seared on the drop spider.

Thank you @Battleborn. I did not do a traditional brine, but will try that next time. I soaked it in milk overnight to pull out any blood I had missed in trimming. I guess more out of habit, I do that with my duck, dove, goose and pheasant meat.

That pork agrodolce was unreal. And very different from the usual pork shoulder recipes. Highly recommend. With whipped mashed potatoes, restaurant quality.______________________________________________I love lamp..

1/3 pound burger . Super melted cheddar. Shredded lettuce. Sauce made with Mayo and Japanese BBQ . It tastes like yum yum sauce but extra . And then the fried egg. All on a toasted bun.
