Sacrilege!   No self-respecting pizzaolo uses a rolling pin…
I got one of these.  Not sure what it does, but someone told me I needed it.  Never used it, figured once I get round pies I can step up to fancy tools.

That’s what the French call an Italian Tickler
Might have to break that out later.  See if the wife finds that as funny as I did!
Please report back to let us know how it went breaking out the tool.

Thanks. The drop spider and the thick SS grate makes it pretty easy to get some fire on the meat.

Thanks. I'm getting better using the smoke daddy. The pecan smoke was perfect.

No pics so didn’t happen- egged some prime strips that turned out really well. The star of the show turned out to be the sea bass piccata.

Good Mother’s Day at the house.

About 1lb each. One rubbed in SPG and the other in Dirty Cow from Angus & Oink.
Just over 6 hours and then thirty minutes rest. As ever, followed the Cook’s Digest method courtesy @Stormbringer    Kept a bit of beef gravy in the pot for brushing on from time to time

If possible, I would have "liked" every pic in this post.  Very nice ribs there!

Damn @caliking. I’m not worthy, got sushi and Chinese takeout for Mother's Day  :)  That killer yakitori spread is so Raichlan worthy.

Thanks @Canugghead @lousubcap. Yakitori usually goes over well on this side, so I try to have it in our regular rotation.

There were supposed to be 3 short ribs in that pic, but caliprine swiped one as soon as the tray hit the table.
