    Notes on earlier cook - @caliking inspired me to cook some naan.  On this recommendation, used the roccbox.  

    Made some hummus using one can canellinni beans and one garbanzo.  No recipe, just adjusted to taste.  I have some really good tahini which makes a big difference.  All that in a food processor plus fresh squeezed lemon, crushed garlic, salt, pepper, cayenne pepper, cumin, evoo, and aleppo pepper.

    Made some raita, was low on yogurt, so used some sour cream to substitute.  Lots of fresh mint from the garden.

    Experimental fries, brined with carolina reaper, salt, spices.  Kind of a weird texture after baking, not bad, but I won't do that again.  Hot AF.

    There is some blended with mayo and mustard on the burger.  Homemade relish on the sausages.

    Nice spread!

    Adding sour cream to raita is the  pro tip. Significantly improves the texture vs. raita made with yogurt only.

    @saluki2007- looks great! Blackened mahi sandwiches are always a strong move, and I like your plancha setup.  Looks like a rub on there- what did you use?

    Thanks. The rub is chef paul prudhomme's magic red fish. Has been my goto for blackened fish for years. I use the lodge double play for the griddle. It also works great for smash burgers.

    Bbq section of T&T Supermarket,  I believe they have only one location in Ottawa. $4.99 few years ago, $8.99 now still good deal provided cheeks were carved out. 
    Eyeballs have interesting texture, kind of rubbery/crunchy but not chewy, somewhat similar to squid and tripe is the closet comparison I can think of.

    Yes, the one in Ottawa is about 14 mins South of me. I don’t go often. 

    I am not particularly squeamish and like to eat adventurously, but have yet to eat eyeballs!

    I made regular spag for the kids.  And then it occurred to me that I should make something for myself.  So it was one of those “let’s see what else is in the fridge” type deals.

    We’re just deciding what to have. Kids are away tonight and we’ve struck out on a few restaurant and take-out options. Maybe I’ll have to doctor something like you did.

    Not chef'd. Picked up this piggy head from bbq place earlier today. Crispy cracklin, puffy cheeks, eyeballs, morsels and rendered muscles in nooks and crannies...hog heavens!

    oh man. That looks mo' beautiful than the last one I picked up a few years ago. Good stuff, for sure. 

    There’s a lot of good eats there. My favs are the periorbital muscles/meat, cheeks, crispy ears. In that order  :)

    I had the hankering for oatmeal cookies.  Alas, only steel ground in the house.  Called up the brisket camp lawyer next door.  All he had in rolled was a case of instant breakfast oats in little packets…various flavors.  

    Why not…. I sifted the oats out with a screen and gave it a shot.  The pics suck but that was worth the cheffing/baking whateverthef*ck you wanna call it  :D
