We did crab legs and scallops for Thanksgiving so I’m going a little untraditional with my leftovers.
Crab cake BLT and sriracha aioli. Served with a side of red currant, bell pepper, and corn orzo (a little rip off of J Alexander’s orzo pasta)

Turkey gumbo. Carcass simmered with onion, celery, carrot, peppercorn and bay leaves to make the stock.
Added spicy andouille and the trinity before adding in the meat recovered from the carcass.
I was hungry, and forgot to take a plated pic. Whatever.

We smoke all kinds of things. Brisket, tacos, pork belly...I don’t know what cut “Mary Jane” is but I’m sure I could find it and we could smoke that too.

Pretty simple open face snack—biscuit buttered a grilled with turkey, boursin cheese, and brandied carmalized onions.

We made sundaes with homemade cranberry sauce and vanilla ice cream.

Dressing and turkey griddle cakes with an egg binder. Pan Fried in butter, finished with leftover Mad Max gravy.

Egged pot pie Turkey, veggies, cream of chicken soup, and milk. Baked in the egg at 400 then topped with pillsbury biscuits for the last 15 minutes. The family destroyed it, which is why I couldn't get a finished pic. Best compliment you can get is when the wife says it is perfect.
