    I will post on another thread, but @caliking and I got a taste of Apex Brisket yesterday.  We have our work cut out for us.

    It is worth noting that this was, for me, the third best bite behind Sean Brock's redfish and Underbelly/44 Farms' beef clot.

    @caliking and I have plans to add incentive to those who turn up Sunday AM for cleanup.... protein availability pending

    For what it's worth, @caliking and @20stone teamed up to produce what was, in my opinion, one of the best things I've ever tasted coming off a BGE or other cooking device.  These were the kalchi rolls at Salado.  Their line was longer and deeper (insert joke) than any other at that fest back in March.  

    I don't know what they have in mind but I am signing up for Sunday cleanup!

    Aw shucks, JIC. That's high praise. Sun brekka won't be as fancy as kathi rolls, but should be good nonetheless.

    I need to quit hanging out with @20stone - here i was planning  on flying in  to NOLA to drink @henapple 's beer, and now suddenly he's roped me into cooking something, with a shopping list etc.  

    @nolaegghead  - any idea of how many faces there will be to feed on Sun morning?

    @Caliking - it has a lot of that, and so do we at our house.  You can find whatever you want here....so no need to bring cookware, knives, bowls, etc.
