    @pgprescott - patience...get 'em to the right level of heat and what for 'em to loosen up ;)  .  Then strike while the iron is also hot as the  window could be quite narrow.  
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Far exceeded my expectation level. Pretty moist for a flat and good flavor from the rub and oak chunks. Sammich tonight!fork is totally gratuitous!

    Playing with pork belly. Got the SV treatment overnight. Half got cow lick. The other half got salt, sugar, nitrite. Then they got smoked, and the bacon style got a maple bourbon glaze. Mmmm pork belly

    @blind99 I assume you added in the form of sodium nitrite? If not curing, what are the benefits?

    Checking out Smobots after following the post by @YukonRon
    I’m generally opposed to electronic gadgets just because I like piddling with the cook -BUT - sleep during a long brisket cook has a certain appeal. I would still baby a prime brisket along with a stick burner, but the Smobot would make brisket an option more often if I cook on the egg. I have a choice and select packer in the freezer right now that needs to be cooked.

    Sitting on the edge of my seat hoping the Jags can keep this up (or at least not choke this game by more than 7), and then hoping the Vikes when by more than 3. Parlay Sunday is great when you don't have a dog in the fight.

    Last night I made dough for pizza tonight. We went out for Mexican food for lunch today and don't think more carbs are the answer tonight, so pizza has been rescheduled for tomorrow night and I just tossed some sausage on the KJ Jr.

    @johnnyp yep sodium nitrite. Same as I use for bacon. Helps make it taste more baconey! You don’t get the full bacon transformation but you can definitely tell. I end up using about a teaspoon or so per piece of belly.

    Crawling out of my cave and realized that not only is NBC carrying the Super Bowl TV signal but my least favorite NFL commentator, Chris Collinsworth, is working the game.  I may have to resort to a radio commentary or a Spanish version.  At least it's only one game.
