    Either screaming hot CI or screaming hot blackstone(more recently for easier clean up)

    Screaming hot low grate in your cooker works too. Just a little less crust. Caveman also works.

    Screaming hot low grate in your cooker works too. Just a little less crust. Caveman also works. 
    Either way, it's easier to cook longer than to uncook...

    @Jeremiah I was a reluctant convert to SV; my experience is much less then most on here, but I’ve had the best luck with cheap cuts, like eye of the round/flank. Agree that it’s worth it even for just reheating bbq

    Just put this chunk of pork on the XL with @YukonRon's peach wood chunks. The smoke smells really nice. Apricot preserve on the pork as I couldn't find peach anywhere this time. Looking forward to this, started late so might be a late night to finish. Running at 320F now, just bringing it down after grilling sausages earlier. Should gradually drop over the next couple of hours. Been on 1 hour now, IT 115F.

    Time was okay but temp sounds about 8 degrees too hot for beef... even a short egg time searing will raise the internal temp...  I usually start my beef at "rare" in SV and finish on the egg to 130 pull and let the temp come up to medium rare.

    @Jeremiah The last SV cook I did was a tomahawk ribeye. It was an upper 2/3 choice steak that weighed about 2.75 pounds. I put it in the SV bath at 129 for seven hours. Then I took it out, dried it well and coated with my favorite rub. After that, seared on the egg at about 550 degrees until I had a nice crust. 
    Everyone raved about it. A steak that thick doesn't rise in temp much during the sear.
    More cooks may not change your mind, we all have our preferences. It might be best for custard deserts and heating leftovers?

    @blasting - At the risk of further damaging your evening, you will not clear this challenge for several years.  First thing to appreciate, is "You never stop being the parent".  And this is for the duration.
    I have two now 26 and 30 yr old sons.  The younger one learned the smart a$$ teen behavior from his brother and started the program a couple of years earlier (in the neighborhood of 13-14 years old).  Supposedly they grow out of it.  With my two data points, the older one did make the transition at around 21-22 years old.  The younger is the poster child for a true millennial attitude-wise.  I'm not sure when the light will go on.
    That is why beer and bourbon were created.  ;)

    Did 3 loads of food on the 36" blackstone. 

    All for recipes and meals to be consumed later in the week.  

    One full load diced potatoes

    One full load of peppers and onions

    One load of stir fry consisting of peppers onions broccoli mushrooms ground beef carrots and liquid aminos 

    Came back outside and my 8 year old was squirting water on and scraping it all down.   

    Raining buckets today so we were in the garage barn thing.

    Man I am sorry to hear about this as I know you have been struggling to keep cars on the road. Probably setting you back a little on the home rehab project.
