    A slow learner here-I have moved on from SRF steak buys and am now working backwards to chain store flat irons for the win.  Since this journey is filled with a few leaps of faith I just tonight fired up a Costco prime ribeye:

    The above was the sear part of a 3 lb reverse sear cook.  
    And here is the money shot:

    I did not press the diamond plate into service (although available), something about rotation ;) .  Yes it was quite tasty but I am continuing to dial back my steak buys. 
    I'm sure it is the cook but I will enjoy true beef goodness thru the briskets, beef ribs, chuckies and flat irons down the road.  Thanks for looking. 
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.

    Nola is grossly overrated and romanticized. Man do they have awesome cold cut Sammy’s with olive salad! Yum!  City is dirty and service is subpar as a whole. There are exceptions obviously.

    SF is great. Love Boston, but not on par with Chicago food wise. NY is NY of course.

    Amazed and horrified by how awful WWI was.  It gets overshadowed by WWII.  I never knew much about it till this podcast.
