@Sea2Ski Nice! There will be some good eats ahead.
    Coleman, Texas
Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
"Bourbon slushies. Sure you can cook on the BGE without them, but why would you?"

Thanks @northGAcock!  Had to get help on the step stones - too big and too expensive. Mason with Bobcat for the heavy pieces and finish work, but a great project for me last summer, fall, and into the spring.  Happy Memorial Day all.

Off to my daughter's last high school sporting event...a softball game. Graduation on Friday. It's been fun. Brown liquor later.

Leaving fire box  door cracked, temp is running 275-300 and I'm not running water.... my fault being stubborn temp would be lower if I did.

but I'm keeping the smoke nice and light blue for now so we will see. I've seen @Lit say it has been done and he's had great results.

I picked up a good chunk of wood today from a local source so worth a try at least.

How did they come out? 275-300 with no water is hard to do running straight wood.
Turned into turbo Ribs. Without the water it shot closer to 325, I added water for the first time ever and it held 270 but by then cook was mostly done. now I will use water because cleanup was not so bad. The ribs were good and not chewy at all so for turbo ribs not bad.
it was a good lesson on fire and fire management, next time I'd like to keep it lower longer so I can get more of a smoke ring. That means water, is that how you do it?
Yes I always run it with water like you said it will creep into the 300s without it plus the water stops the drippings from burning and giving a bad taste. If the temp starts creeping up with water it's easy to add some cold water to bring the temp down.

Getting drunk with no repercussions. No school tomorrow. All whilst making dulce de leche in the SV. Multitasking.

Damnit, I botched that damn thing when trimming it. Had the biggest fat vein I've ever seen and wasn't sure what to keep and what to leave.

Whatever, it'll still be good.  Time to get drunk

Just dropped off 3 St Louis trimmed racks of ribs at the local firehouse. I apologize in advance for the poor quality (even by my standards) pic:
    Gotta be the phone... ;)

That pic is proof that it didn't happen...
