Cold smoked Bologna for breakfast sandwiches then seared on the stone and seasoned for some color. Cold smoking some of the ground brisket for smash burgers probably later tonight.

Im thinking I can stay below 300 on the BW with no water, is it possible?

I just put the amazing smoker in the fire box. You can put a small bed of lump and a couple chunks in the bottom with water and easily run 100-150. When I did bacon I was running it like a stick burner and had a full fire going but kept draining and adding fresh cold water and it's not hard to keep below 200. I bought one of the aluminum buckets from Home Depot and it works great just leave it under the spout to drain during the cook.SkinnyV said:For the cold smoke , guru @ 170? Water in the pan?

Just finished dinner. Egg at 525° to roast the corn, then cranked up to 600° for the bone in ribeye. As this bad photo makes it look like a piece of charcoal, I swear it's barely med rare, and one inside part was a nice rare. Sorry no sliced pics. I was starving by then. Also made my first run at green lightning shrimp, which are beyond amazing. Totally recommend green lightning shrimp to everyone.Large BGE, Adjustable Rig, Small BGE, 2 BBQ Guru's, 18" WSM, Rockwood, Stage 3 Roush Mustang and a hot wife...
