Right now it's looking like 3 weeks.
How long before they start using dynamite? Should we start taking bets?

So lessons learned. I packed that cube WAY to much, and had trouble cutting at top and bottom right through meat. Made it hard to separate skewers when I pulled everything open.

Second, I ended up with smaller pieces of meat when I packed, as I cut around the bone of the leg of lamb. Not good, ended up with chunks too small for the skewer to bite into ... so I had to fix a few when I unpacked. I kind of knew that would happen as I packed it, but hoped for the best.

So in future, leave meat packed a good inch from the top, and use nice big steaks, cut about 1/2" thick. No tiny pieces.

    Otherwise they turned out great.

    Meat glue!?

Fwiw, I shorten the sticks and snip off the points with cutter pliers before vac sealing.  Save bag and freezer space, minimize risk of bag piercing and stick burning.

I was worried about the bag being punctured by the points. Fortunately they didn't ...

Even though the bags are thinner, I find sharp stuff like bones and skewers don't puncture the bag when using the chamber sealer vs the external bag sealer (nearly as much, at least).  I think it must be because the slow drag of a tightening bag on the external sealer causes tears.  The chamber causes the bag to slightly inflate then immediately collapse around the food/objects.

....or maybe they just got touched by their uncle one too many times and are hopelessly broken.  That is sadness.

Woke up early, because cats are aholes.  One of ours has started sprinting across the top of our bed, from my wife’s pillow to mine and then the floor, over and over again, making friggin circles in our bedroom, until one of us gets up.  Mind you, there is food in their bowls, because we have an automatic feeder set up.

Anyway... enjoying a cuppa Joe on the porch with the fire table in full force.   Nice morning.

Our cat does the same thing, every morning at 6:30. Like clockwork. If she isn’t in the room, she will come and bang on our bedroom door.

Keep an eye on them in the freezer over time. I almost always get air leaks (intrusion?) over time with sharp objects. Now, anything w/bones gets covered with a square of parchment or foil.

And morning celebrating as well.  (That bourbon advent calendar brought about the early celebration option!)
Well played on both sides right there.
