    Took another stab at this one hundred speardini project yesterday. Unseasoned turkey layered with bacon, like a 'canvas' to be painted at cook time.

    Thanks @JohnInCarolina . It's crazy labour intensive, thankfully I figured out a way to make it easier. It was tricky to get the knife exit at the matching slot on the opposite side... always knew the grooves on the inside floor are for slicing through, last night I finally realised I could use the grooves in the ceiling (identical tiles top and bottom) to guide the knife tip, duh! And yes, I did RTFM and this tip is missing. May be it's common sense, I dunno  :)

    It's a little too small for me to fork over $4k, but it really is a nice looking cooker.

    Where did you find this? I want to do lamb speducci myself, because they are insanely priced at the grocery store (like $1 or more per skewer).

    @Mark_B_Good Got mine from Lakeshoreliving, their regular price is 139. Go to the link I posted... Consiglios in Etobicoke has it on sale for 129 (regular 175) with free shipping. The Italian build quality is superb. Now that I’ve graduated, I’m ready for lamb next  :)

    Yup the unit will pay for itself after few batches. Stay away from the el cheapo ones on Amazon.

    Ordered one. You have made my day. Wow. I know what I'm eating this weekend! 

    By the way, if you try the lamb, you can get cheaper shoulder chops/steaks, just carve off the bones. As they cook, just salt them. They don't need anything more than that. Get them crispy, but not burnt ... they taste out of this world.

    Nice! Did you order the wooden skewers too? Keep in mind that most regular skewers won’t fit. I found a batch at Dollarama that fits and stocked up, I’m running out and may not be so lucky next time ;(  Worst case scenario: shave the skewers or enlarge 200 holes 😂

    btw, after skewering place the block in freezer about 45 min to make slicing easier, remember to use the ceiling knife grooves. Have fun

    I'm sure most buyers are really familiar with the Franklin design but I just know there will be at least a few buyers who didn't pay attention and won't realize until their first cook that Franklins pits have no dampers on either the fire box or smokestack.
    I'm sure the puzzled look on their face will be priceless.

    Just ate at a Mexican restaurant in a college town here in MI. The waitress had worked there 1 year.  She has never heard of taco Tuesdays!

    Yeah I got 5 packs of 100 skewers from them ... that should last me a while. I figure when my family is here, we'll probably cook 50 at a time, for appetizers. So that's 10 cooks worth of skewers.  I can always pick up more from them if I need to. Was about to order the 1000 pack, but I was like ... Mark, don't get carried away, just like toilet paper in March 2020. LOL.

    Thanks for the tip on freezing ... I now remember my uncle advising the same. Makes sense. What do you mean by ceiling knife groves?

    Watching the Operation Varsity Blues doc on Netflix. Those ultra wealthy people sure did manage to rationalize away all sorts of terrible behavior. Getting their kids rated for learning disabilities to secure extra time on the ACT, only to allow more cheating?  Man...
