Yes, Tobasco. I guess tobacco would be a little odd to go with eggs.

@lkapigian Man you’re really killing it with the cured meats. Very cool.
I hope I can get a curing chamber done before too long.
I’ve found myself reading more and more about fermented hot sauces. This is an entertaining rabbit hole to go down.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I only read the first 20 posts or so in the "fermented pepper or something" thread, need to buckle down and read the rest of it.
Not like I don't have the time.

You don't neccesarily need a curing chamber with all the tech.  They didn't have those for thousands of years of meat curing.  Drying meat creates humidity, for example.  So you can put your meat in an enclosed space.  Temp really doesn't matter for some steps....

She's doing well and should come home today. There is some minimal damage, but they think it will heal/not impact her daily life.
    Thanks for asking, Michael!
    Good news for sure.

Glad she is headed home. I’m sure she’s itching to get out of there. I’m happy to hear the chances of lasting effects are minimal.

    Computer issues, again.
My Nikonians (photography website) wouldn't load correctly anymore, several months ago.  I got some things to try and after that, it wouldn't load at all.  I could still get to it on my desk computer, just not my laptop.
Then, a couple days ago, I tried it again on my laptop and boom, loaded perfectly.  I hadn't changed a thing, to my knowledge.  But then, THIS site wouldn't load at all (I get "Error 400, Bad request.  Your browser sent an invalid request").  Can't get in for a couple days now.
Again, no issue with my desktop, only my laptop.  FM.

Then you could have a local DNS issue. You can flush your DNS if you're feeling brave and techie. A quick web search will give you the command(s) depending on your OS

I tried again, flushed the cache and the cookies (and my history while I was at it), but still no dice (the good news is that doing that did not screw up Nikonians, this time).
I'm neither brave nor techie, so I'm not going to play with the DNS stuff.  Just need to accept that my laptop is over 10 years old (can't update the OS anymore) and I'm going to have issues with it, and more the longer I have it.
    Thanks guys!   :)
