:o  I hope you mean you've gained 10 lbs into your "COVID 19 lockdown", not lost 10 lbs with the disease; please clarify for us!   :s

@ColtsFan. Funny you posted that.  Yesterday went food shopping. This was the first time off our property other than walks up and down our street in 3 weeks  and we are not planning on not going for another 2. We went not only for us, but picked up a bunch of things for both sets of our parents, an aunt and uncle,  and a very elderly neighbor couple who just celebrated their 76th wedding anniversary. It was 2 full shopping carts of stuff. One cart was fruits and veggies, and other things that spoil fairly quickly like milk, herbs,  some cheeses for sandwiches and fresh pastries we can’t/don’t want to make. It was a $700+ bill.  Never paid that much for groceries before, but I thought that was pretty good,  considering.  I am sooo looking forward to a fresh salad for lunch. The strawberries with breakfast tasted even better than they looked.

No storm induced insomnia here but my dog started puking at 2:55 this morning. He's sleeping at my feet right now as I have been up since. Funny how that works....

Very true.  We we did get a few looks. Made me uncomfortable for about 2 seconds the first time, but then I thought about how we were doing  the right thing and doing what we should be doing. Screw what they are thinking.  They should be looking at the guy who came in only to get two things: brown sugar and a box of cereal.  You can’t tell me he isn’t going out more than necessary...
    But to each their own.

Not sure what this is, but butcher said it is pretty good.  He called it a Prime Rib roast, but I always thought prime rib was a steak.  Oh well, figured it was worth a shot.  Pulled at 110 and opted for no sear.  If I do this again, will pull at 105.  6lb was almost not enough with a teenage boy around

Hard to tell if you're joking, but if not - "Prime Rib" is the whole cut before it's sliced into Ribeye Steaks. If left whole and roasted it's called a "Prime Rib" (not to be confused with "Prime" grade). As far as temp, 105F would be pretty rare and chewy for a fatty cut like that IMO. Ribeyes/PrimeRibs are one of those cuts that really shine when taken to around 125F.  From your photo it looks like you hit closer to 140F+ than 110F. I don't trust those leave-in probes for that reason, I've been burned more than once. I think spot checking with an instant read is preferable.

Post was tongue in cheek :)  I do appreciate the time to explain though, my humour sometimes is lost in translation. It is a flameboss probe and I confirmed temps on it prior to the cook.  I do agree, spot checking during the cook is a good way to do it, but this cook tracked true to time for the weight, so I did not get worried about my temp probe.

It definitely was not 140.  At 140, my dogs would have had a treat.   Edge as shown is more well done due to the cook duration and 300deg temp.  The inside was rare.  It carried more temp after the cook than I planned on, hence pulling next time at 105.  I will also spot check earlier just to make sure.

Wonder about Sous Vide a PrimeRib and just searing?

Had a happy surprise this afternoon, when I got a Klingspor's Woodworking Tool catalog.  Apparently Bridge City Tool Works was back in business!

They made very precision, beautiful, and expensive tools, and I had about a dozen of them.  Suddenly, I couldn't find them anywhere and their website went dark.  I read the "history" tab on their new site, and it didn't sound like they went out of business at all.  It did change hands, John Economaci is still their designer, but HQ has moved from OR to CA, w/ manufacturing moved to China (d'Oh).

I didn't recognize any of the tools they now offer, save one.  I got a chuckle out of this $300 beaut, allowing you to build perfectly-tapered.... chopsticks!  Both chinese and japanese sizes!

Making high-quality chopsticks out of fine hardwoods, a part-time retirement job?   =)
