Finally.  They move up significantly in the pecking order with a mid engine.

@WeberWho Sadly standard transmissions are slower.  It should be an option tho
Slower, yes. Way more fun, yes. It’s why I kept my ‘08.

@lousubcap Japanese butchery is quite a bit different from Western standards (ie cutting by seams), so when I'm done, it will have been trimmed to a normal sized packer.  These contain the whole point, as it extends up toward the neck, shown in that last photo.  That's a good 8-9 inches of it's length that will be removed.  No new cookers, lol.
Any chance you are willing to document the process, including trimming, from start to finish? I’m sure that you’d find an enthusiastic audience here.

I’ll PM you my address so that you can send me the trimmings. 😊

Not a problem.  My plans are a bit drawn out, so I'm thinking of making a running post with what I hope to be regular updates.  The trimmings are a part of the plan.

Looks like bacon.....how much do you think it will trim out to?

    Impressive.

The Crowd Cow website cites to expect a 30% loss but I have plans in place to mitigate those losses.  I neglected to take a pic of the 'flat' side, but this whole thing is enshrouded in fat, includes the entirety of the point, more of the flat and a significant section of the neck.  I've never seen a brisket with the rib meat still attached.  It's F@#%&)@ glorious!

Thinking this might be a challenge, but I am sure you will make this hunk of cow into a masterpiece.

I tried SRF gold a few times, and while good, it was just too much fat for me, personally.

As awful as this may seem, at the end of a few of our dinner parties, there was an appreciable portion left that was just too fatty to use in anything going forward.

I know SRF gold is not near the quality of what you have and it likely is a poor comparison, however, I would be curious in the comparison of the cook itself.

Have fun, take notes, and share the journey. I always enjoy your cooks and presentations.

some last minute pies.  I made no-knead dough on Sat.  Revived it, hate to see food go to waste.
    Dude.

    I love this cook.

I will be doing these. Don't hate me, but I love vegetarian pizza with heirlooms, onions, mushrooms, and sweet peppers.

The heat is one thing, but the heat with 90% humidity is a whole different beast.

Exercising restraint.  The great robo-call machine called my land-line (yes, old) from itself.  Caller ID had me nailed by the second ring!

Brother I have really considered it now that I am older. The 8 months of summer is really tough.

That’s funny!  I’ve had some close, prefix and one or two digits but never hit the lottery like that.  Was your auto warranty expiring or did you need some credit relief?

Most UPS trucks aren't air conditioned.  On one hand, a career with UPS pays well and has benefits and pension, on the other, you risk heat related injuries in their trucks.
